Tomatillo Salsa

Tomatillos are like little sour tomatoes with a distinct gooseberry smell and taste. Pronounced “Toma-Tee-Yo” , these fruit are so strange they feel like they should not exist, but I am so glad they do. This simplest of salsas can be easily turned into Pico de Gallo with the addition of chillies and coriander, so I have included that variation below. 

 

Ingredients

 

120g Tomatillos – finely chopped

¼ Red Onion – finely chopped

½ Lime – juice

1 tsp Cane Sugar

Salt and Pepper. 

 

For Pico de Gallo add:

 

1 Green Chillies – finely chopped

80g Coriander – finely chopped

 

Method

Add the tomatillos and onion to a bowl.

Sprinkle with the sugar and salt and pepper, add the lime juice and mix.

Taste and season.

Serve.
