Spinach, apple, radish & sumac salad

I love lemony sumac and it pairs very nicely with slightly spicy radishes and apple. Here I’ve teamed these ingredients with some young spinach leaves in this simple, fresh summery salad.

 

Ingredients

1 crisp apple, cored and cut into thin wedges

2 handfuls of young spinach

6-8 radish, finely sliced

3 tbsp extra virgin olive oil

2 tbsp apple cider vinegar

1.5 tsp crushed sumac

Salt and black pepper

 

Method

To make the dressing simply combine the oil, vinegar, sumac and a generous pinch of salt and some freshly ground black pepper.

Toss together gently with the remaining ingredients.
