Roasted Sweet Potato Mash

The epitome of an easy side dish: sweet and tasty comfort food with a hit of Nutmeg.




3 Sweet Potatoes – about 300g 

2 tsp Groundnut Oil

1 tsp Salt

2 tsp Nutmeg

1 Tbsp Vegan Butter

Plant Based Milk - optional




Preheat the oven to 200C Fan and line a baking tray with baking paper.

Peel the sweet potatoes, cut them into chunks and add them to a bowl with the oil and salt.

Toss the potatoes until covered and pour out onto the baking tray.

Roast for 45 minutes.

Either return the roasted chunks to the bowl or to a pot.

Add the butter and nutmeg and mash the potatoes.

Taste and season with salt and pepper, or more nutmeg if desired.

For a creamier consistency, either add a little more butter or some milk but go easy. Once it is in, you can’t take it out.
