Paprika chili cabbage
This recipe was invented by veg scheme member and our longest serving volunterr, Matthew Dring.
1 medium onion roughly chopped
2 or 3 cloves of garlic chopped
1/4 of red cabbage sliced
1 medium to large red pepper sliced
For the sauce:
1/4 litre/1 cup of hot water
1 teaspoon of vegetable stock
1 teaspoon corn flour
1/2 teaspoon of paprika
1/2 teaspoon of chilli powder
Heat 2 tablespoons of vegetable oil in a medium to large sauce pan.
Add the onions and garlic and fry for a few minutes.
Add the cabbage and simmer on a medium heat.
While the cabbage is simmering make the sauce.
In a measuring jug measure out a 1/4 of a litre of hot water and add the vegetable stock and stir, then stir in the cornflour until it thickens, then add the paprika and chilli powder and stir in, the sauce is done.
Now add the red pepper to the sauce pan and stir then pour in the sauce, give it a stir and simmer on a low to medium heat for a few minutes and it's ready.
It tastes great with wholegrain rice.
