Pan-fried fennel

This is by far the easiest and most delicious way to cook fennel.


Olive oil

Knob of butter (optional)

pinch of fennel seeds (optional)

1 fennel bulb



Slice your fennel bulb in 1cm thick slices.

Heat a fryinging pan on a medium-high heat. Add a lug of olive oil and knob of butter, if using. Add a pinch of fennel seeds and let sizzle for a few mintues. Once the fat is fairly hot add your fennel slices to the pan and sear for a few minutes until very brown. Turn over and fry until golden/dark brown on the other side.

Serve as a side or on top of a warm salad.
