Pan roasted new potatoes
One of the easiest, most delicious ways to prepare new potatoes, with just 4 ingredients including the oil, salt and pepper.
150g New Potatoes
2 Tbsp Groundnut Oil
1 tsp Salt
1 tsp Coarse Black Pepper
Preheat the oven to 200C Fan
Cut the potatoes in halves and add to a bowl with 1 tsp oil, salt and pepper. Toss to coat.
Heat a cast iron or oven safe pan with the remainder of the oil.
Place the potatoes skin side up in the pan and fry for 8 – 10 minutes until golden on the bottom.
Place the pan in the oven and roast for 15 – 20 minutes.
Test the potatoes but they should be cooked through, if not, cook in 5 minute increments until done.
