Marinated mushrooms in garlic, lemon & thyme

This simple recipe needs no cooking at all. After an hour or two, the mushrooms let out their juices and mix with a wonderful mix of garlic, lemon and thyme, creating a delicious dressing all on their own. 

Unless your mushrooms are very dirty, please don’t wash them in water, just brush and dirt off using a pastry brush; washing makes them very watery and will make the end result rather insipid!

 

Serves 4

Ingredients

 

300g trimmed white or chestnut mushrooms, brushed of any dirt and quartered

2 tsp chopped fresh thyme leaves

Juice and zest of 1 lemon

1 large garlic clove, crushed

4 tbsp extra virgin olive oil

1 tsp salt

Black pepper

 

Method

Mix everything apart from the mushrooms in a large bowl.

Then simply toss in the mushrooms and mix well.

Allow to sit at room temperature for 1 to 2 hours until the mushrooms have shrunk slightly and let out their juices.

Give them a stir a couple of times during the marinating period.
