You can make this flavourful recipe with pretty much any green leaf so it’s extremely versatile. Feel free to add a little more chilli if you like a kick!

Ingredients

200g greens, stalks separated and put to one side

2 tbsp olive oil

1 clove garlic sliced

¼ tsp pul biber chilli flakes

¼ tsp sumac

½ tsp ground coriander

2 tbsp chopped fresh coriander

 

Method

Finely slice the stalks from the greens.

Heat the oil in a medium saucepan over a moderate heat. Add the sliced garlic and cook for 2-3 minutes until the edges are browning. Now add the sliced stalks from the greens and a pinch of salt. Cook for about 5 minutes until soft.

Add the ground coriander, sumac and pul biber to the pan and cook for a minute or two.

Add the leaves and cook until just wilted. Toss through the chopped fresh coriander.
