Daikon bacon (vegan)

There are many vegan bacon alternatives but probably none as good as that made from daikon radish. This is simple to make, with simple ingredients, and will provide all the flavour, taste and texture of the real thing without any animal products whatsoever.
Ingredients
70g – 200g Daikon Radish
Salt
70g Light Soy Sauce
20g Olive Oil
5g Liquid Smoke
40g Maple Syrup
5g Nutritional Yeast
3g Garlic Powder
3g Mushroom Seasoning (very salty)
3g Sweet Smoked Paprika
Black Pepper to taste
Method
Peel and wash the daikon and then either use the peeler or a mandoline to get long strips of the radish.
Lay out the strips on kitchen towel, cover with salt and leave for 15 minutes.
Mix all the other ingredients in a bowl large enough to hold all the daikon strips.
Wash the daikon strips under cold water to get rid of the salt and then add them to the marinade.
Cover the bowl and allow the daikon to marinade for at least 30 minutes.
Heat a pan on medium high heat.
Add 2 Tbsp Olive Oil to the pan and fry the daikon strips for 5 minutes, turning regularly to avoid burning.
When the daikon starts to crisp, remove from the pan and lay the cooked strips over two chopsticks to allow them to further crisp into crinkled shapes, reminiscent of bacon.
