Cucumber, ginger & sesame salad
This recipe really takes cucumber to a whole new level, without too much fuss. It's very adaptable - you can include all of the ingredients, or if you don't have certain things, or just can't be bothered, don't worry - the most important components are the sesame oil, vinegar and onions. The other bits make great additions, but aren't essential.
1 medium cucumber, sliced
1 spring onion or half a small onion, thinly sliced
Small piece of ginger, grated (optional)
Small bunch of fresh coriander, chopped
1 Tbsp Sesame oil
1 Tbsp rice vinegar (or 1 tsp apple cider)
Pinch of salt & pepper
Chilli flakes (optional)
1 Tbsp toasted sesames
Mix the cucumber up with all the ingredients. Serve as a side salad.
