BBQ Glazed Roasted Aubergine

The sweet & smoky BBQ flavour in this dish is achieved thanks to one my favourite brands of BBQ sauce, Tubby Toms. Feel free to substitute for your own favourite BBQ sauce. This is an easy prepare and leave recipe and the results are a really lush umami experience where the aubergine just melts in your mouth. 




1 Large Aubergine – typically serves two

2 - 3 Tbsp Olive Oil

Pinch of Salt

2 Tbsp TubbyToms Smokey Schweet BBQ Sauce (or a different BBQ sauce, if you prefer)



Preheat the oven to 200C Fan and line a baking tray with baking paper.

Cut the aubergine in half lengthways and score the open face with a knife.

Using a pastry brush, cover the scored face with olive oil and sprinkle with a little salt.

Place the aubergines face down on the baking tray and bake for 35 minutes.

Remove the aubergines from the oven and carefully turn the aubergines over.

Mix 1 Tbsp of Olive Oil and preferred BBQ Sauce in a ramekin and then using the brush, cover the scored surface with the mix.

Return the baking tray to the oven and bake for 15 minutes.


Goes well with sweet potato mash and green beans or with creamy polenta. Delicious.
