Aromatic radish & broccoli rice

This recipe was developed for us by North London based Vegan Food enthusiast Tantrem De Bastet, whose recipes are available on www.vegandebastet.com and on instagram as @vegantantrem. His cooking is heavily influenced by predominantly Oriental and Asian cuisine but also North African and Middle Eastern fayre. He also dabbles in Sourdough breadmaking and baking and loves a bit of fusion.

I had a large crop of radishes and got inspired for something a little different. Quick and easy Radish, Broccoli and Tofu topping for organic short grain rice. Delicious.

 

Ingredients

200g Radish - squashed or roughly chopped

220g/small head of broccoli - roughly chopped

280g Firm Tofu - mashed with fork

2 Garlic Cloves - finely chopped

2 tsp Red Chilli Flakes

1 tsp Curry Powder

1 Tbsp Light Soy Sauce

1 Tbsp Dark Soy Sauce

180g Short-grain Brown Rice

Spring Onion and Coriander to garnish

 

Method

Cook the rice to pack instructions.

Heat 2 Tbsp of Groundnut Oil in a pan on medium heat, then add the chilli flakes and fry for 3 minutes.

Add the tofu and sauté for 5 to 6 minutes.

Add the curry powder and garlic and mix through until this becomes aromatic.

Add the broccoli and radishes and stir through.

Add the soy sauces, stir through and cook for 5 minutes.

When the veg is warmed, add the lemon juice and mix

 

Served with organic brown rice and garnished with spring onion and coriander. Drizzle with more lemon juice to taste.
